Inside Out Cereal Bars- great dessert for rainbow or art parties, birthdays and St. Patrick's Day

Hi Everyone!  Hope you had a great long weekend.  Last fall I hosted an Inside Out Movie Night for some family friends.  The most favorite dessert of that night was these Inside Out Cereal Bars!  Luckily they are pretty easy to make.  With St. Patrick’s Day coming up, they are a perfect treat for this time of year.  Use them at a rainbow birthday, art party, a sprinkle or confetti party or any colorful event. You can skip the chocolate dip but why? Inside Out Cereal Bars

Ingredients
  • 10 Cups Puffed Rice Cereal
  • 2 cups Trix cereal
  • 16 ounces mini marshmallows
  • ¼ cup margarine
  • 1 bag white chocolate chips
  • ¼ cup vegetable oil
Instructions
  1. Melt margarine in large pot.
  2. Add marshmallows and stir until melted and smooth.
  3. Remove from heat and add in both cereals and mix until coated.
  4. Spread in 9×13 greased pan and press down using waxed paper until compact. Let set in refrigerator.
  5. When cool, microwave white chocolate chips and oil in the microwave until smooth stirring every 20 seconds.  Do not over heat.  Depending on your microwave this should take between 1½ and 2 minutes.
  6. Cut cereal bars into rectangles.
  7. Dip half of the bars in the chocolate and set on parchment paper or cooling rack.
  8. Once all the bars have been dipped, put the rest of the chocolate in a plastic baggie with the tip cut off or piping bag. Drizzle over the chocolate portion of each bar.
