Hi Everyone! Happy 2015! These Blueberry Oatmeal Cookies are chewy, delicious and a great treat to start off the New Year. I always like to be a bit more healthy once the holidays pass but my kids still like to have something special in their tummies. These are sweet without being over indulgent. I took our favorite basic oatmeal cookie recipe and added dried blueberries for some extra nutrients. We did a similar version in fall with apples but the blueberries (or any dried fruit) work great for this time of year.
- 3 cups quick cooking oats
- 1 1/4 flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup softened butter
- 3/4 cup brown sugar, firmly packed
- 1/2 cup granulated sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 cup dried blueberries
Preheat oven to 350. In a small bowl whisk together flour, cinnamon, baking soda and salt. Set aside. In a standing mixer with a paddle attachment, cream butter, granulated sugar and brown sugar. Add eggs and vanilla. Mix until well combined. Add flour mixture and blend until just incorporated. Do the same with the oats. Mix in blueberries. Drop by the tablespoon onto parchment lined cookie sheet and bake for 11 minutes until lightly browned. Let sit on cookie sheet until cooled.
