Happy Friday Everyone! Today I am sharing this super easy but oh so cute Gingerbread Cookie Bark idea with you! Easy and cute seems to be a running theme this week. Everyone adores bark at Christmas! I love seeing all of the creative ideas for this dessert in speciality stores and on my Pinterest feed. Bark starts with a thin chocolate base and you can basically layer anything on top of it to build your bark. Last year I made a Christmas Candy Bark. This year my kids are obsessed with gingerbread cookies from Trader Joe’s. They are delicious and I thought they would look super cute in bark. This travels great and holds up well so it’s the perfect treat to take to holiday parties or cookie exchanges.
Here’s my recipe for bark, but really, use what you love:)
- 2 cups semi sweet chocolate
- 2 cups white chocolate
- gingerbread men cookies
- m&m’s or other Christmas candies
- white sprinkles
Line a cookie sheet with parchment paper. Set aside
Melt semi sweet chocolate chips in a heat proof bowl in the microwave, stirring everyone 20 seconds until smooth.
Once melted, spread into a thin layer on the cookie sheet. tap the cookie sheet on the counter to smooth out chocolate and let set. You can pop it into the refrigerator for a bit to speed things up.
Using the same technique, melt the white chocolate. Once melted, let it cool for about five minutes. (You don’t want it to be too hot or it will melt the first layer.) Drizzle the white chocolate carefully over the semi sweet and then spread until you have a solid layer. Immediately place the cookies and sprinkle on the M&M’s and sprinkles. Gently press down on the candies where need them to make them stick to the chocolate.
Let harden and then break or cut into pieces.
