Ready for our first Christmas post? Christmas Eve is in exactly one month! I am so excited to spend the holidays in our new house. I am really drawn to a bright pink pastel color scheme this year so I am slightly addicted to recipes that I can make with a pink peppermint. I will be sharing a few desserts with this flavor over the next few weeks. Pretty, festive and yummy all at once.
For me Christmas is taking things you love (especially if there are easy) and adding a little holiday flair. My kids are always asking for brownies, so I wanted to come up with a version for Christmas. I saw a bag of crushed candy cane at Target and immediately thought it would be the perfect topping for a Christmas brownie.
You need:
An 8×8 pan of your favorite brownie recipe baked as directed and cooled. Make sure you line the pan with a strip of parchment so the brownies can be lifted out of the pan. This will make frosting and cutting easy.
- 2 sticks of butter softened
- 2 cups of powdered sugar
- 1/4 teaspoon peppermint extract (more or less to taste)
- pink food coloring (aim for light pink color)
- crushed candy cane
Beat the butter, powdered sugar, peppermint extract and food coloring until smooth. Spread over brownies. Top with crushed candy cane.
Cut into 16 squares.
