Ready for some back to school ideas? With July wrapping up, I always start thinking about the school year and how to start off on the right foot. One year (when I had more time to be a good mom:)), I tried baking a different type of cookie for my little ones’ lunches every week. This recipe was by far their favorite. Even my son who (gasp) doesn’t like peanut butter loves these cookies. I took a classic peanut butter cookie recipe that I grew up with and added toffee bits. I have to drive to a bigger grocery store to find them but they are worth the effort. The results are an airy, crunchy, slightly sweet cookies with just the perfect amount of chewiness.
You need
- 1/2 cup sugar
- 1/2 cup brown sugar
- 3/4 cup butter flavored shortening (honestly this is the ONLY thing I use shortening in but it really makes the cookie)
- 1/2 creamy peanut butter
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cup flour
- 1 cup toffee bits
Mix flour, baking soda, and salt in a small bowl and set aside
In you standing mixer, combine sugars and shortening and mix until light and fluffy. Add peanut butter, egg and vanilla. Mixed until light and creamy.
Add your dry ingredients and only mix until combined (not more than 20 seconds). Over mixing will toughen your cookies.
Quickly add the toffee bits.
Using a mini ice cream scoop, scoop dough onto cookie sheet lined with parchment. Dip a dinner fork into water and lightly press down dough.
Bake at 350 for 7-9 minutes until very light brown. Remove for oven and let cookies rest on sheet until cool.
