Bunny Buns:) OK, they really are carrot cupcakes (what else would a bunny eat) decorated to look like bunny buns.
I used my favorite carrot cake recipe which has a bunch of spices and is super moist. I am not a big fan of carrot cakes with lots of nuts, raisins and such so this recipe is perfect for my family. I topped the cupcake with an amazing cream cheese frosting and packaged them with our adorable bunny buns tag. Your friends will love you!
Cake:
- 3 cups peeled and finely grated carrots
- 3 large eggs
- 1/3 cup buttermilk
- 2cups sugar
- 1 1/2 cups vegetable oil
- 1 1/2 teaspoon vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ginger
Frosting
- 12 ounces cream cheese at room temperature
- 1/2 pound (2 sticks) butter at room temperature
- 1 teaspoon vanilla
- 4 cups powdered sugar
Directions
Preheat oven to 325 degrees. Line standard muffin tin with white paper liners.
In a bowl whisk together flour, baking powder, baking soda, salt, cinnamon, and ginger. Set aside.
Mix carrots, eggs, oil, buttermilk, vanilla, and sugar until combined in the bowl of an electric mixer fitted with a paddle attachment. Add in flour mix and mix until just combined. Do not over mix or the cupcakes will be tough.
Fill cupcake liner 2/3 full with batter. Bake for 22-27 minutes until the cake spring bake when lightly poked. Let cool in baking tray for 10 minutes then turn out onto wore rack until completely cooled.
To make frosting, mix cream cheese, butter, vanilla and powdered sugar in the bowl of electric mixer until smooth. Cover cupcake with frosting then roll in coconut or white chocolate sprinkles. Add a white frosting drop for the tail.
