This may surprise you but not all of cake that you see on dessert tables are real. Many, many years ago when I was planning my wedding, the cake lady suggested we do several fake tiers of cake and serve from a sheet cake in the back to save money. I was very surprised and passed on this option but once I started planning dessert tables, the idea made sense. I love using a big three tiered cake for center pieces on my tables. The problem 1. Cakes, especially big ones, are expensive. 2. I usually don’t have enough guests to justify ordering such a big cake. 3. Having to make such an elaborate cake and decorate it last minute is SO STRESSFUL.
When you’re done, the candies or ribbons pop right off.

How do you respond to children who want to eat the cake, though? If my guys saw a cake this gorgeous they’d immediately start asking when we were going to cut it. Maybe you could just call it a decoration and hope no one tried to sneak a test bite?
