Red, White and Blueberry Popsicles

Happy Monday Everyone!  Today I am sharing these amazing red, white and blueberry popsicles.  While they are a great dessert for Fourth of July, these are great to make all summer long.  My kids ask for these all the time.  Sometimes I even let them have one for breakfast since they are completely healthy.  It is a yummy treat that’s good for you and so easy to make.

You need:

  • 2 cups Greek Yogurt
  • 1 cup Raspberries
  • 1 cup Blueberries
  • 1 banana thinly sliced
  • 2 teaspoons sugar
  • 12 mini plastic cups
  • 12 popsicle sticks

Red, White and Blueberry Popsicles

In two separate bowls, toss the raspberries and the blueberries with one teaspoon of sugar each.  Spoon or even easier use a piping bag to put a little bit of yogurt in the bottom of each of your cups. Drop in enough blueberries in each cup to make one layer. Add in a little more yogurt to cover. Make a layer of bananas and then add more yogurt to cover.  By now your cups should be about 2/3 filled.  Tap down the cups as you go to let the yogurt fill in the voids.

Do your final layer of raspberries and add enough yogurt to fill the cup. Make sure to tap again. Put in your popsicle sticks and freeze.

    Iff I make the raspberries and blueberries with no sugar I can give to my dogs who also love the 4th of July. Just not the big booms when darkness falls. Thank you.
