Hey Everyone! Today Crystal from Cooking with Crystal sharing this amazingly delicious recipe! I made it for my fam last weekend and they already asked for it again!
This recipe for Salsa Verde Chicken Casserole is just perfection.
First of all, I love making dishes using rotisserie chicken from the store, because c’mon…..we all know it’s delicious! Plus it makes for a quick and easy dinner.
This recipe doesn’t require too many ingredients either, so that makes it a winner right there.
You have the option of adding sliced avocados, green onions or fresh cilantro to it as well!
You will start out by spreading 1/4 cup of the salsa verde on the bottom of a greased 8 inch square pan.
Then combine the chicken, sour cream, and the remaining 3/4 cup salsa in a small bowl.
Begin by layering half of the tortillas and the chicken mixture;
sprinkle with tomatoes, minced cilantro, and half of the cheese.
Repeat layers with remaining tortillas, chicken mixture, and cheese.
Then bake, uncovered, at 400 degree’s for 20-25 minutes or until bubbly.
Serve with remaining salsa and optional ingredients like sliced avocados or green onions.
Recipe:
2 cups shredded rotisserie chicken
1 cup (8 oz) sour cream
1 ½ cups salsa verde, divided
8 corn tortillas (6 inches)
2 cups chopped tomatoes
¼ cup minced fresh cilantro
2 cups (8 oz) shredded Monterey jack cheese
Optional: avocado slices, thinly sliced green onions, or fresh cilantro
Combine the chicken, sour cream, and ¾ cup salsa in a small bowl. Spread ¼ cup salsa on the bottom of a greased 8 inch square pan.
Layer with half of the tortillas and chicken mixture; sprinkle with the tomatoes, minced cilantro, and half the cheese. Repeat layers with remaining tortillas, chicken mixture and cheese.
Bake, uncovered, at 400 F for 20-25 minutes or until bubbly. Serve with remaining salsa and if desired, optional toppings.
