Chocolate Chip Peanut Butter Cookie Cups made quick and easy in mini muffin tins

Hi Everyone!  I am really excited to share these Chocolate Chip Peanut Butter Cup Cookies with you.  My family absolutely loves Reese’s Peanut Butter Cups candy so for our Valentine’s dinner, I wanted to create a dessert with those flavors. I adapted my favorite peanut butter cookie recipe to make these sweet little desserts.

Chocolate Chip Peanut Butter Cup Cookie made quick and easy in muffin tins

  • 1/ 2 cup Brown Sugar
  • 1/2 cup White Sugar
  • 3/4 cup Butter Flavored Shortening
  • 1/2 cup Peanut Butter
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 24 chocolate kisses unwrapped

Preheat oven to 350. In a small mixing bowl whip together flour, baking soda and salt. Set aside

In the bowl of a standing mixer, cream sugars and shortening until light and fluffy.  Mix in peanut butter until well combined then egg and vanilla.  Add in flour mixture and mix until just combined.  Do not over mix.  Stir in chocolate chips.

Lightly grease mini muffin tin. Using a small ice cream scoop fill each muffin cup with one scoop of your dough.  Bake for 14 minutes or until light golden.  Remove from oven and let cool for 5 minutes. Place chocolate kiss in center of each cookie.  Once completely cool, run knife around the edge of each muffin cup and carefully pop out the cookies.
