Easy Pistachio Platter

Hi Everyone! With the new year here, I know all of us are trying to eat healthy and maybe trim a few of the holiday pounds. However, there is no reason to give up seeing and celebrating with friends and family.  This platter of blue cheese and blackberries pairs perfectly with a bowl of pistachios and is one of my favorite things to serve when hosting friends . Really could you get any easier?

The pungent blue cheese, tart blackberries and crunchy, slightly salty pistachio completely hit the spot and will leave all of your guest satisfied while still sticking to those resolutions.  Since the blue cheese is so strong and rich, you wont be tempted to overdue it.  Add a spring of rosemary for the amazing scent and serve it with sparkling water for a fun festive snack.

Pistachios are a great starting point for any party platter.  They pair well with a variety of healthier foods- popcorn, dried or fresh fruits, charcuteries.  Called the “skinny nut”, pistachios are the nut of the year and are one of the top trending food of 2015. Since 30 pistachios have only about 100 calories, you can treat yourself without over doing it.  (TIP: The empty pistachio shells may serve as a great reminder of how many pistachios you’ve eaten)
