Happy Monday Everyone!  Hope you all had a great Thanksgiving.  I actually spent most of the weekend in bed with the flu so I was very excited to end the weekend with these Oreo Peppermint parfait.   The  white chocolate and peppermint flavors are a great holiday combination and the crushed Oreos add the perfect crunch. These are extremely easy to make and will hold nicely, so you can make them well in advance.  This recipe is also so versatile.  Layer the mousse with whatever you dream up.  The mousse has a delicate chocolate peppermint flavor so it won’t overwhelm your layers.  If you want a stronger chocolate flavor add up to 2 cup total white chocolate chips.   Add as much peppermint exact as you like to taste.

You need

  • 1 cup white chocolate chips
  • 4 cups heavy whipping cream
  • 1/2 cup powdered sugar divided
  • peppermint extract
  • 10 Oreos
  • 6 mini Oreos for garnish

Pink Peppermint Layer

In a microwave proof bowl, heat 2 cups whipping cream until steaming, about 2 minutes. Pour in white chocolate chips.  Let sit for a few minutes and then whisk until smooth.

Cover with plastic wrap and refrigerate until completely chilled.

Pour mix into the bowl of a standing mixer fitted with the whisk attachment and mix on medium high.  When soft peaks form, add a few drops of peppermint extract and 1/4 cup powdered sugar.  Continue whisking until medium to stiff peaks form.

Whipped Cream Layer

In the bowl of a standing mixer fitted with the whisk attachment, whip 2 cups whipping cream on medium high.  When soft peaks form, add  1/4 cup powdered sugar.  Continue whisking until medium to stiff peaks form.

Crush Oreos in a Ziploc bag

Put mousse and whipped cream into piping bags.  Begin layering the pink peppermint mousse, whipped cream and Oreo pieces.
