Cranberry Cookie Clusters

These cranberry cookie clusters are a quick, no bake “cookie” that are perfect for the holiday season.  I have to be honest- my family didn’t want to try these at first because the clusters didn’t look like something they would like.  After a little persuading, they tried them and actually loved them.  They are sweet, salty, chewy and crunchy all at once.  These clusters are hearty and travel well so use them for cookie exchanges or when visiting friends and family.  The recipe is so simple.  Let your kids help you make them.

To make you need

  • 1 bag white chocolate chips
  • 1 Tablespoon vegetable oil
  • 2/3 cup dried cranberries
  • 2/3 cup mini Oreos roughly chopped
  • 2/3 cup macadamia nuts roughly chopped
  • 2/3 cup roughly chopped  pretzel sticks

In a heat proof bowl, combine white chocolate chips and oil.  Microwave, stirring every 20 second until the chocolate is melted and smooth.  The chocolate should never get hot. Pour in pretzels, cranberries, nuts and Oreos and gently mix until well combined.  Scoop into mounds on parchment paper using an ice cream scoop.  Let the cluster set until chocolate hardens. Pretty easy!
