Make It Monday- Easy Easter Cupcakes

Happy Monday Everyone!  I just love these simple Easter Peep cupcakes.  They don’t take a lot of effort or baking skill but they will definitely add a little extra to your Easter table.    Since I don’t have the patience or expertise to be one of the amazing great cookie or cake artist I often work with for parties, I am always on trying to come up with something easy but festive for the holidays that I can do myself.  These little peep bunny rabbits popping out of their bunny hole are quick, cute and memorable.

To make, you need:

  • Your favorite vanilla or light colored cupcakes- I used a vanilla box mix
  • Your favorite white frosting
  • green food coloring
  • green sprinkles
  • Peeps

Make green frosting and fill into a piping bag fitted with a large tip. Cut an oval shaped hole into the top of the cupcake. Remove cake.  Pipe your green frosting around the edge of the cupcake filling in frosting from the edge to the hole. Top with sprinkles. Stick the peep into the hole. Add extra sprinkles if needed.
