These are my absolute favorite holiday cookie! I only make them the month of December because I really can’t stop at one cookie and I’m afraid I might overdose. They are so soft and chewy with the perfect balance of spice and sweetness. My whole family loves them!
You need
- 1 cup sugar with extra for rolling
- 3/4 cup butter, room temperature
- 1 egg
- 3 tablespoon molasses
- 2 cups flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 tablespoon lemon juice
- 1 cup powdered sugar
In a standing mixer, cream butter and sugar until light and fluffy, about 3 minutes. Add egg and molasses.
In another bowl, sift together flour, baking soda and spices. Add to butter mixture and mix until just incorporated.
Scoop dough into one inch ball and roll in sugar.
Bake at 350 on a cookie sheet lined with parchment for about 10 minutes.
Let cool completely.
Make glaze by sifting powdered sugar into 1 tablespoon water and 1/2 tablespoon lemon juice.
Fill a Ziploc bag with the glaze and cut a small hole in the corner. Drizzle over cookie. Let glaze set.
Package and share. You can use these great take out boxes that come with free tags available in my shop!
