Sausage Stuffing Rolls

If you family is anything like mine,  weekends are all about sports. Between rushing to soccer games and trying to catch our favorite football games on TV,  I try to get some healthy food into my family.  These Sausage Stuffing Rolls are the perfect solution and are a super recipe for fall.  I make a big batch in the morning and pop these tasty treats into the oven as the day allows.  They work for breakfast, lunch or dinner.  I just love that all my favorite savory flavors of fall are all mixed up together in this easy to serve roll.  Better yet, since I am signed up for the Just for U program at Safeway,  I was able to save $3.00 when I purchase 3 Hillshire Farm products.  So I definitely stocked up on lots of Jimmy Dean Sausage Rolls for this recipe plus Hillshire Farm Lunch Meats for the week. The Just for U program is an easy way to save money.

You need

  • 1 Jimmy Dean Sage Sausage Roll
  • 2 Sheets of Puff Pastry
  • 2 Tablespoons olive oil
  • 2 granny smith apples small diced
  • 1/2 cup parsley chopped
  • 1  onion chopped finely chopped
  • 1/4 teaspoon nutmeg
  • 1/4 cup chicken stock
  • 2 cups dried bread stuffing mix
  • 2 eggs beaten

Defrost puff pastry according to directions.

Heat olive oil in a large skillet.  Cook onion until translucent.  Add Jimmy Dean Sage Sausage and apples and cook until sausage in browned.  Remove from heat and mix in parsley, stuffing mix, chicken stock and  nutmeg.

Let cool. Unfold pastry and cut into six strips. (Really these can be any size as long as they are a rectangle) Put 1/2 cup of the sausage mixture in the center of one side of the pastry.

Brush edges with beaten egg. Fold over and press down edges with a fork.  Repeat until you use all of your puff pastry.  Brush with beaten egg and cut three slits in top of roll.

Bake at 400 degrees for 30 minutes or until golden. If your family is not ready to eat, cover uncooked roll with plastic wrap and refrigerate until ready.

Want to serve these at a larger gathering (THANKSGIVING!)?  Simply spoon filling down the center of the puff pastry. Cut 2 inch strips in the puff pastry every down each side of the filling. Criss cross the strips over one another.

Brush with egg and bake at a 400 degrees for 30 minutes.  Makes a beautiful side dish.
