Make It Monday- Berry Crumble

Hi All (It’s still Monday California time but barely)

Hope you had a great weekend!   I attended a few great BBQ’s and just had to share one of my favorite desserts with you.  This is perfect for a casual family style get together and the berries are so delicious right now, you just have to try it.  Par baking both the crumble and berried separately will keep the crumble crisp.

For fruit, you need

  • 4 cups blackberries rinsed
  • 2 cups blueberries rinsed
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 2/3 cups sugar

Toss above ingredients together and pour into an 8×8  baking pan (I double my recipe for the images below). Cover with foil and bake for 20 minutes at 350.  Gently stir.

IMG_4053 For crumble you need

  • 1 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 teaspoons vanilla
  • 1/8 teaspoon salt
  • 6 tablespoons unsalted butter cut into pieces
  • 1/4 cups slice almonds (optional)

Put first 5 ingredients into food processor and pulse mixture until combined.  Add butter and pulse together until mixture forms large balls.  Add almond if using and pulse to combine.

Pour mixture onto parchment lined baking tray and break any larger pieces into 1/2 inch bits.

Bake at 350 for 15 minutes until the edges are lightly browned.

Crumble topping onto fruit and bake for an additional 15 minute.  Serve warm with vanilla ice cream.  HEAVENLY!:)
